Grandma, What's For Supper?
Remember on the T.V. show, Hee Haw how the crew would ask 'Grandpa, what's for supper?' I think it was Grandpa Jones would answer some Southern item as he was polishing a non-existent window pane.
Last night I fried chicken. That's a confession. Back when the kids were home I didn't often fry chicken. I would pop the whole chicken —usually two—into my large roaster with potatoes, carrots, and onions.
In order to fry chicken I always had to soak my cut up chicken in salt water, then drain, season with salt, pepper, paprika and roll in flour. You can see why I didn't fry it often. Frying two chickens was time and work. I would first brown the bigger pieces in my cordon bleu skillet, then one at a time into the cast iron skillet with half a skillet of hot oil until they were all in, then I would place the heavy lid back on and let them finish frying until golden brown.
What's for supper this evening? I'm not quite sure, probably fried eggs. Fast, cheap and easy. And good for you.
